The correct play is to stand. You should ALWAYS stand on any combination of nineteen or higher. It doesn't matter if the hand is soft or hard. The dealer's upcard makes no difference.
The dealer has a 42% probability of busting when a five is up, but ALSO a 24% chance of making seventeen or eighteen. Your soft nineteen beats all those combinations.
Aggressive players are sometimes tempted to double in this situation, but it's not a profitable choice. Only 15% of the cards will improve the hand while 54% will turn it into a statistical loser. Why screw up a good thing? The smarter bet is to stand and let the odds do their job. You'll win this one 66% of the time.
